The world of tea is rich and varied, so here is a brief overview of the main styles of tea and guidelines for how to prepare them.

  • are also known as presentation teas
  • are generally made from high quality tea
  • contain very little caffeine

Display teas were once presented as gifts to visiting royalty in China. Recently they have become available in the west and are very popular with tea enthusiasts.

These are miniature works of art. Each is comprised of approximately 200 individual tealeaves hand tied with silk thread and shaped into interesting forms. When they are infused in a glass teapot or wine glass, the leaves unfurl to reveal the flowers as they re-hydrate back to their shape. They make for a dramatic tabletop presentation and point of conversation.

Flavour profiles are vegetative, smooth, gentle, sweet and soft, sometimes with a hint of jasmine or rose.
